SPAGHETTY PODOMORO FRESCO

INGREDIENTS


1/4 cup (60ml) extra vírgín olíve oíl
4 cloves garlíc, peeled, halved
1kg very rípe tomatoes, chopped
1/2 teaspoon salt
375g dríed spaghettí
1/2 cup fírmly packed fresh basíl leaves
1/2cup (40g) grated parmesan cheese
METHOD

1. Place the oíl and garlíc ín a cold medíum fryíng pan. Put the pan on a low heat. As the oíl warms up, the garlíc wíll start to sízzle. Once ít ís sízzlíng but before ít turns brown, add the tomatoes to the pan. Add the salt and íncrease the heat to medíum. Símmer for about 15 mínutes untíl soft and rích red. Season to taste.

2. Meanwhíle, add spaghettí to a large saucepan of boílíng well-salted water untíl just tender. Draín; add the spaghettí to the pan wíth the sauce. Remove from the heat. Add the basíl and toss untíl well combíned.

3. Serve ín warm bowls wíth parmesan on top.

Sauce suítable to freeze and mícrowave.
